Psalm 121 tells of looking to God for help. God is dependable, no matter what difficulties we face in life. If we depend on God, he will help us through what issues we face. He is faithful. In ancient times, the hills were associated with idolatry. However, the author of psalm 121 is obviously worshipping the true God. He is depending on God to help him through the issues he faced.
People in biblical times would go up the mountains to meet and worship God. Moses went up
Mount Sinai to meet God, and that is where he received the ten commandments from God.
Jesus went up the Mount of Olives to pray to his heavenly Father. Jesus would teach people on the Mount of Olives. He took James and John (the sons of Zebedee), as well as Peter up the mountain, and was seen in his glory, meeting with Moses and Elijah, who also had glorified bodies.
